Ingredients

  • 1 ½ pounds russet potatoes ((cut into ½” to ¾” cubes))
  • 1 medium onion ((coarsely chopped))
  • 1 large red bell pepper ((coarsely chopped))
  • 2 tsp olive oil
  • 1 ½ tsp herbs de provence

Instructions

  1. Preheat oven to 400°F.
  2. Combine all ingredients in a large ziploc bag or in a large bowl and mix well, until the herbs are evenly distributed.
  3. Spread the mixture evenly across a large sheet pan. You want to be careful not to crowd the pan too much here, or they may nor brown quite as nicely and will take a bit longer to cook.
  4. Place the sheet pan in the preheated oven and bake for about 25 minutes. Remove the pan from the oven and stir. Cook an additionally 10-20 minutes, or until potatoes are cooked through. Cooking time will depend on the size of the pan (a crowded pan takes longer) and the type of pan (a dark pan will cook much faster than a light pan).
  5. Serve immediately.
