Cinnamon Apple Coffee Cake

A low sodium cinnamon apple coffee cake – perfect for fall!

Ingredients

Apple Topping

  • 5 small apples (peeled and sliced)
  • 1/4 cup sugar
  • 2 tsp cinnamon
  • 2 Tbsp all-purpose flour

Streusel

  • 1/3 cup brown sugar (packed)
  • 1 tsp cinnamon
  • 2 Tbsp all-purpose flour
  • 1/3 cup pecans (chopped)
  • 3 Tbsp unsalted butter (cold)

Cake Batter

  • 1 1/2 cups all-purpose flour
  • 3/4 CUP sugar
  • 2 tsp sodium-free baking powder
  • 4 Tbsp unsalted butter (melted)
  • 1 large egg
  • 1/2 cup milk ((I used 1%, but others should work fine))
  • 1 1/2 tsp vanilla extract
  • 1 tsp almond extract

Instructions

Initial Prep

  1. Preheat the oven to 375°F. Spray a 9” springform pan* with cooking spray and set aside.

Streusel

  1. Stir together the brown sugar, cinnamon, flour, and pecans.
  2. Mix the cold butter into the dry ingredients until the ingredients are crumbly. Set aside.

Cake Batter

  1. Mix together the dry ingredient in a mixing bowl.
  2. In a separate, smaller bowl whisk together the melted butter, egg, milk, and extracts.  
  3. Pour the wet ingredients into the dry ingredients and whisk together until mixed. Do not overmix.

Assemble and Bake

  1. Spread the batter evenly into the prepared pan. Top the batter evenly with the apple mixture and then sprinkle the streusel across the top. 
  2.  Bake the cake in the preheated oven for 40-45 minutes.
  3. Let the cake cool in the pan on a cooling rack before removing the sides of the pan and serving. The cake will keep for several days in the refrigerator. 

Notes

  *Alternately, you can use a 9” square (or similar-sized cake pan). If you are using a glass dish, reduce the oven temp to 325°F.
